So you guys know I have been going round and round with the idea of Once A Month Cooking and Freezer Cooking for awhile now. I actually bought some foil pans and freezer bags and all kinds of stuff last week in preparation, but I never have a freakin' free second around here to do it.
But I did get a little bit of stuff done. I cooked up some ground beef and put it in freezer bags, made up and cooked some meatballs, cooked up some Italian Sausage for pizza and pasta, made a bunch of PB&J's and put them in the freezer, and took a big box of cereal and a big bag of chips and separated them into little snack size bags so Tater can have ready to eat snacks. So, for a beginner, I am pretty happy with my progress so far. But, I do have something to brag about.
I cooked up some chicken breasts in the crock pot, and shredded them to use later in casseroles, fajitas, etc.. I was really happy with how they turned out and wanted to share them with you guys. I even took pictures! You know this isn't like me to share pics of any cooking experience lol, so it must be good!
Okay, so I put the chicken breasts in the crockpot. I just threw them in there, I didn't trim the fat off or anything, because, well, I am lazy. Then I put a little bit of water (probably between 1/2 and 2/3 cup), and sprinkled some Lawry's, Pepper, Garlic Powder and Onion Powder on top. Then I just let it cook. Seriously. That is all.
I cooked it on high and about 7 hours later, it looked like this disgusting mess.
But then came the good part. I just took the chicken out, and using two forks, shredded it all up. It was so tender it fell right apart. It was really juicy, I kept eating it as I was shredding it.
And this is what I ended up with. Well, actually, 4 bags, each with two cups of shredded chicken in each one. I am really excited about this, I think it will save lots of time and effort when it is time for dinner! :)
I wanted to share this with you guys, because I had never even thought of precooking chicken this way, and I never would have believed that it would be this simple!
